A fluffy, light and sweet based frosting that accommodates all flavors and colorings. Can be used as a filling and frosting.

Ganache
Can be rich and velvety, fluffy or glossy made with either dark, white or milk chocolate.
Suitable for smoking techniques.
Curd & Jam
Egg yolk and butter based curds are great rich and silky smooth fillings for most any cake. Curds are typically citrus based but can also be fruit based.
Jam’s sticky consistency holds up well in between layered cakes. Jams are typically fruit based but can also be milk based.
Both are very suitable for Naked cakes.

Soaks
Reserved for liquor based cakes and Tres Leches cakes only, milk soaks are poured onto unfrosted cakes prior to filling and frosting so that cakes absorb extra flavor and moisture. Due to the nature of these overly moistened cakes, layering and sheet cake pros and cons will be discussed during consultation.
